Cheesy Ham & Potato Chowder
Perfect for those blustery fall days, this chowder will win the whole family over! Serves 6-8
Ingredients
3 medium red potatoes cut into bite size wedges
Water for boiling potatoes
1/4 cup chopped onion
3 tablespoons butter
3 tablespoons flour
pepper
3 cups milk
1 cup shredded cheese
1 cup cubed cooked ham
garnish with chopped green onion, sour cream dollop, bacon bits, etc.
15 minutes prep time
40 minutes cook time
Preparation:
Boil enough water to cover potatoes, boil until tender, drain but save 1 cup of the water
Melt butter in large saucepan over medium heat, saute onion in the butter until tender
Add flour to the butter and onion mixture and stir until smooth
Season mixture with pepper to taste
Continue to cook and stir for 1 minute
Gradually add the reserved cup of water, milk, and potatoes
Stir well and add cheese and ham
Simmer over low heat, stirring frequently, for about 20 minutes
